Our exotic culinary tour of the Middle East: hummus recipe

Here is the first of three recipes we’ll be sharing with you on our culinary tour of the Middle East. This is a very easy recipe for hummus, a popular Middle Eastern dip. For a unique and tasty hummus, add chopped walnuts, red chili pepper and pomegranate juice to the final mixture. Top with olive oil and serve.

1 8-ounce can of whole garbanzo beans (chick peas)

8 ounces of tahina sauce (sesame paste)
1 tablespoon salt
5 ice cubes
2 fresh lemon, squeezed

Mix garbanzo beans, tahina sauce and salt with five ice cubes until smooth. Then add lemon and mix for 20 seconds.

Place the mixture in a bowl and garnish as desired (your choice of parsley, whole chick peas, sumac, cherry tomatoes or lemon slices). Sprinkle with olive oil and serve with warm pita bread. Serves four.
